Premium saké starts with great rice and great soil. That’s where our journey to brew premium saké began.
We had the soil. On our farm in California’s fertile Sacramento Valley, where much of the world’s highest-quality sushi rice is already grown. We had the water. Fresh spring water cascades from the Sierra Nevada Mountains.
By embracing our Californian roots, we’ve crafted a saké that’s unapologetically rebellious yet holds up against any of its Asian counterparts.
Then we found the rice. Yamada Nishiki is a Japanese varietal used to make Japan’s highest-quality sakés. We grow this rice ourselves on soil we have farmed since 1923.
Just as the vineyards of Napa Valley absorb the terroir of their surroundings, our rice fields bathe in California’s natural goodness.
The fertile soil nurtures our rice, providing the minerals and nutrients necessary for a robust flavour profile.
The pristine waters flowing from the Sierra Nevada mountains give life to our crops and purity to our saké.
Sunlight in abundance helps the rice to grow healthy and strong, thus yielding more flavour in every grain.
